In the rapidly growing town of Frederick, CO, one building owner had the opportunity to rebrand an existing restaurant with a new name and management. The owner recognized great potential in the new Savory Grille and Pub, noting that the new restaurant could be its own dining destination for the expanding town. Located right off I-25, the restaurant's high visibility and easy access make it the perfect stop for truck drivers, ensuring a consistent influx of visitors both local and out-of-state. The Tundra Design Group was tasked with updating and outfitting the current space with a smart restaurant design to cater to Frederick's diverse clientele.
Efficiency is key to great productivity. A simple 90-degree rotation of the exhaust hoods and serving line helped to create a streamlined flow, improving the staging and delivery of meals. This change did require a new exhaust hood location, but one of the best parts of a remodel is the opportunity to make energy efficient upgrades; the existing exhaust hood was not energy efficient, which likely added unnecessary costs to the owner's energy bill. This new exhaust hood is a much better fit!
Good restaurant design includes reusing existing restaurant equipment wherever possible. Despite the fact that the previous tenant did not maintain the kitchen well during his tenure, we were able to reuse the main walk-in cooler (which is a costly item in any project's budget); we opted not to reuse the remaining equipment due to condition and age.
Part of becoming a destination restaurant means having the flexibility to seat larger groups. We added a combination of booths and chairs with drop-leaf tables to size up or down depending on party size. The inclusion of high-top tables and bar stools in the bar and west dining area gives diners their choice of seating options. The variety in seating makes the restaurant perfect for families or one-top tables.
These changes to the Savory Grille and Pub add a fresh look and feel to the existing space while increasing efficiency for the staff. We thoroughly enjoyed being a part of the new Savory Grille and Pub in Frederick, CO!
