  • Q:

What type of wrap is good for wrapping hot sandwiches and maintaining them within a chafer?

Will this work for wrapping biscuit sandwiches (hot sandwiches) that will be placed and held in a chafer over heat? will this wrap make my biscuit soggy?

    • A:

Condensation is going to be the biggest factor of making the food soggy. So, good ventilation will be the best bet for ensuring the food maintains its consistency, especially breads and fried foods. Then, of course, it depends on how you stack the sandwich and what ingredients you use. Bread tends to absorb moisture from condiments, tomatoes, meats, etc.

With that said, we typically see caters do a sandwich bar (even for breakfast), where the guest can assemble their own sandwich, and the caterer doesn’t have to worry about the entire thing becoming a soggy mess.

This type of paper may work for a short period of time. It’s much like you see fast food and to-go restaurants use to wrap their foods and keep them crisp for the drive home. Just make sure there is an open end to let the moisture escape.
