In foodservice, the "Danger Zone" refers to the temperature between 40° F and 140° F, where bacteria is most susceptible to multiplying quickly. So quick, in fact, that bacteria can double in growth on foods within this temperature range. A refrigerator thermometer is key for making sure you stay out of this danger zone—but only if you check it! Keep a clipboard hung on the fridge nearby to record regular temperature recordings throughout the day. You'll get a gold star from your health inspector.
