When you’re cooking method needs a little caressing, and you find your sauces, syrups, or delicate dishes are burning more often than you’d like, maybe it’s time to put a few double boilers to work. Double boilers are essentially two stock pots nestled into each other, with the bottom pot holding water and the top holding your ingredients of choice, and it’s the combination of the two that works all the magic. Without the inside pot actually touching the burners, there’s less chance of your food getting singed, crispy, or burnt black; instead, the boiling water is what creates the cooking heat. Double boilers are essential for things like melted chocolate, and keeping a few in your kitchen kit is a great way to always be prepared.
