When I decided to retire my current chef's knife, Mercer was a familiar brand from culinary school. Having always used an 8-in Chef's blade, there were times when I wanted more contact to the board (i.e. chopping quantities of fresh herbs), but a 10-in blade never felt comfortable to use. The 9-in Mercer is perfect for my needs, and the Renaissance style is a perfect upgrade from the culinary school starter kit. I use it all day in a commercial kitchen, and it holds a keen edge to the end. Light honing before I store it is all I have ever done for excellent sharpness. It's lighter than other knives I've used, but the balance and comfort makes weight an easy trade off. Easily my go-to knife for everything from super-fine chiffonade to cracking chicken bones.
