      Comments about Victorinox 8 in Red Chef Knife:

      I'm a bit of a snob when it comes to knives, & generally I prefer the now-hard-to-find carbon steel knives. --I bought this knife because of a good review in Cooks Illustrated. Gotta say, it's a tremendous value. It's a little lighter than many chef knives, but that doesn't bother me; indeed, if you're doing a lot of cutting that may be a slight advantage. Balance is nice, and the edge comes from the factory VERY sharp. IMHO, the Victorinox line of stainless knives is a great buy. I have a few paring knives, a boning knife and now this one. Most knives in this price range are pretty mediocre, but Victorinox is head and shoulders above others in this range.
