Mezzalunas make mincing herbs like garlic and parsley that much easier. Featuring a curved steel blade that cuts ingredients with a simple back-and-forth rocking motion, mezzaluna means "half moon" in Italian and are sometimes referred to as "crescent knives". Mezzaluna knives are equipped with handles on either end of the blend for easy maneuverability with minimal risk of injury. Plus, unlike chef knives which tend to splay out ingredients during cutting, a mezzaluna catches product on either end so nothing gets left behind. You may also see a mezzaluna knife used by pastry chefs to cut shortening into flour for perfect biscuits and pie crusts. Sold in a variety of sizes, you may find smaller mezzalunas work better for finer cuts (like herbs) while larger blades can be used to slice pizza.
