  • Q:

How long will the cambro food carriers keep 4" deep pulled pork safely hot? How long will they keep 4" deep potato salad cold?

      Thanks for your question.

This Cambro UPC600 Ultra Camcart® 45" Black Pan Carrier's hold time varies. As per the Cambro catalog, if a hot food item is put in at 190°F it will drop to approximately 179°F in 4 hours time. The flip side of that coin, cold food items, when put in at 33.9°F will warm to approximately 35.8°F in the same time period. That said, this depends on how often you open the doors as opening them often will affect the internal holding temperature.

If you'd like to discuss holding foods in greater details please give a member of our Tundra Restaurant Supply team a call at 1-888-388-6372. We'd be more than happy to speak with you.
