Thanks for your question. This Cambro UPC600 Ultra Camcart® 45" Black Pan Carrier's hold time varies. As per the Cambro catalog, if a hot food item is put in at 190°F it will drop to approximately 179°F in 4 hours time. The flip side of that coin, cold food items, when put in at 33.9°F will warm to approximately 35.8°F in the same time period. That said, this depends on how often you open the doors as opening them often will affect the internal holding temperature.
