Does the dough press require a hood over it? (for pressing corn tortillas)

Whether or not you'll need a hood of some kind over this Dutchess Bakery Equipment DUT/TXM-15 15" Square Manual Tortilla Press really depends on your local health department regulations. Our technician does not think a hood would be necessary, but we recommend confirming with your local health department to be sure.

I would like to fully cook the dough ball right in front of the customer. Is this product only capable of par bake and if so why?


This product CANNOT fully cook the dough ball. If you try and fully cook them in there, they'll be under too much pressure, which would make it steam and blow out. Press time on this unit is only one second, then it needs to go to a griddle. This product is just deisigned to take the dough ball and flatten it (par bake).
