The cooking surface is thick enough to create even heat distribution, ensuring that everything gets cooked consistently. Sides and backsplashes prevent a mess as foods like burgers pop on the grill, and the welded seams remove the concern of grease and dirt being trapped in small places. The Vollrath Cayenne® 24 inch Gas Flat Top Griddle (40722) uses natural gas but comes with a kit that allows you to transition to liquid propane so the griddle can be used on the go. Thermostatic controls are located on the front of the unit.
