This rethermalizer is designed to safely support both wet and dry induction heating depending on the needs of the kitchen. With induction heating you get better temperature precision and little to no heat loss, which means lower energy bills for you. It comes with solid state controls and three temperature sensors inside the chamber to ensure accurate monitoring of heat distribution for the best even heat application. The Vollrath - 74110110 - 11 Qt Silver Induction Rethermalizer even has an LED indicator to alert when the food needs to be stirred. The Vollrath 74110110 is UL and FCC compliant as well as NSF listed.
