A one or two quart mixer may do the trick when propped up on the counter at home, but in the commercial kitchen something that small just isn’t going to get the job done. Commercial mixers are meant to tackle big jobs, think 10 and 20 quart tasks, and having one or two doing battle on your back line can turn bulk jobs into a piece of cake. The right mixer makes all the difference, and when you’re churning up batter for a day’s worth of delicious desserts, it’s batter better to have a few commercial mixers at your disposal, than having to do everything by hand.
