  • Q:

Can I use this to cut sweat potatoes

    47713 potato cutter

Unfortunately, no, this cutter should not be used to cut sweet potatoes. Sweet potatoes are much denser than regular potatoes and will cause the cutter blades to break. In fact, the best (and safest) way to slice and dice up sweet potatoes is with a very sharp knife that has a granton edge (so the slices don’t stick to the blade). However, in researching the fastest way to cut sweet potatoes, we found suggestions on microwaving or parboiling the sweet potato for a short period of time, which will soften them up enough to go through a cutter such as this. The problem we see with this method is that if the sweet potato is overcooked, you’ll end up with a mushy mess.

what replacement guide rod goes with 47713 potato cutter?

In regards to the Vollrath 3/8" Cut Potato/French Fry Cutter the part you need depends on which side the replacement guide rod is on. There is both a short thread and a long thread guide rod (parts 45614-1 and 45613-1 respectively). Here is a parts break down http://www.etundra.com/ShowDocument.aspx?fileId=259064 which details each piece of the fry cutter. Once you've determined which guide rod you need to replace, give our friendly sales staff a call at 1-888-388-6372 and we'll be happy to order it for you.
