Ranges come in both electric and gas options, and one isn't necessarily better than the other. Gas tends to be cheaper than electricity, which can save you money on your utility bills. Though gas ranges tend to be the most popular found in commercial kitchens, many chefs like the convenience of an electric range. With electric ranges you never have to worry about a gas leak in your kitchen.
Commercial ranges are highly configurable. For the top of your commercial range most consider adding open burners, a smooth griddle, or some combination of the two. With open burners you can fry, boil, saute and more; its versatility is a favorite amongst chefs. Before settling on the top of your range first think about your menu. Do you anticipate cooking up burgers all day long? Then you might consider a griddle, which makes it easy to keep a consistent temperature throughout service.
If you anticipate finishing off dishes like French onion soup, lasagnas, or melted sandwiches, consider adding salamander/broiler to the mix.
