The Southbend 40 Gallon Direct Steam Kettle with 36 inch Cabinet (DMT-40) is composed of a stainless steel cabinet base and hinged cover with six-inch legs. The kettle has a 40-gallon capacity, while the 36-inch cabinet below offers plenty of space for storage in a busy kitchen. The kettle works by direct steam with a control valve and steam trap for efficiency. The Southbend - DMT-40 - 40 Gallon Direct Steam Kettle with 36 inch Cabinet is also certified by the CSA and NSF.
