      Regarding exhaust requirements for this Southbend KSLG-40 40 Gallon Gas Floor Steam Kettle, the manufacturer cannot dictate these requirements. They are decided on a state by state, and even city by city, basis, and you'll need to check with your local municipality to determine what kind of ventilation is needed.

      That said, the manufacturer was able to shed a little light on the situation. Just for your information, if you were to steam chicken or beef in this unit you would create grease-laden steam, and this would require type 2 ventilation. Something like rice that doesn't produce grease-laden steam would need type 1. Outside conditions require different regulations. Again, it's all based on your local code.
