For efficient cleaning, each door has a stainless steel liner. It also includes a drip trough connected to the door, which catches any condensation to run to the drain. The Crown Steam - DCX-2-36 - 36 inch 6 Pan Convection Steamer with Direct Steam Base includes safety high-limit pressure control, water level control, and operating pressure control for safe operation. There is a mechanical timer which can be set for up to an hour with an alarm that alerts staff to the end of a cooking cycle. This steamer is CSA listed and NSF certified.
