      In regards to installing a water cooled unit, or specifically the Scotsman C0330MW-1C Prodigy Water Cooled 400 Lb Ice Machine, it's really up to the discretion of the installer. Normally it would be plumbed with copper. The drains are generally plumbed with PVC.

      Thanks for contacting Tundra Restaurant Supply. We're happy to help answer customer questions. In regards to an ice machine/maker and what is "best" our technicians agree that water-cooled units are superior to air-cooled units.

      The reason being: water-cooled units do not create excessive heat, cooling is more efficient, and the units to not have condenser coils that need monthly maintenance. That said, water-cooled ice machines are more expensive to operate. With a constant flow of water through the unit you're water bill will be higher, and some cities may not allow water-cooled units as any leak in the system may contaminate the water supply. Be sure to check with your municipality to see what the restrictions are.
