When someone references a thermostatic griddle or a manual griddle, they are referring to the type of controls that commercial griddle has. For example, a manual griddle has controls like that of a commercial range with adjustable dials that can be set to low, medium or high settings (with a few in between). The caveat with manual griddles is that they require constant adjustments, particularly if you cook a lot of frozen items.
A thermostatic griddle on the other hand, has controls similar to a commercial oven. With a thermostatic griddle you set the desired temperature you want to cook at (say, 375° F) and your griddle will automatically adjust to hold the desired temperature no matter what you cook on it. For those who specialize in all-day breakfasts or run a busy burger business, thermostatic griddles are the way to go for consistent temperatures. However, if you plan to cook a variety of foods on your griddle and anticipate needing a wide range of temperature options, then a manual griddle would be the best option for you.
