The Difference between a Thermostatic and Manual Griddle

When someone references a thermostatic griddle or a manual griddle, they are referring to the type of controls that commercial griddle has. For example, a manual griddle has controls like that of a commercial range with adjustable dials that can be set to low, medium or high settings (with a few in between). The caveat with manual griddles is that they require constant adjustments, particularly if you cook a lot of frozen items.

A thermostatic griddle on the other hand, has controls similar to a commercial oven.
