Sieves are primarily used for sifting flour, which aerates the flour and removes any lumps and bumps that might affect the consistency of your dough. A sieve, though, is simply a fine meshed strainer which could be used for a variety of tasks like: catching seeds when you squeeze lemons, or straining liquids like clarified butter. Your commercial kitchen wouldn't be complete without a few sieves in your drawers!
