Mexican food really evolved after the Spanish colonization of the Americas. Spaniards brought unique food items unheard of by the Mesoamerican natives at the time, such as vinegars, cheeses, wines, lamb and beef. These new flavors mixed with the natural, local ingredients already being cooked with, and made for a new cuisine that would evolve over the years to what we know as Mexican food today.
We asked our team what some of their favorite dishes were. At the top of list were shredded pork tamales, chili rellenos, chicken enchiladas, and, of course, salsa.
