Wood vs aluminum pizza peels
You might need both. Wood pizza peels are better for putting pizzas into the oven because dough is less likely to stick to them, especially when you dust them with a bit of flour. However, metal pizza peels are better for taking pizzas out of the oven, because they’re thinner and can help trap in heat.
How to use a pizza peel
It may seem pretty straightforward, but there are some tips that can help.
1. Sauce, cheese, and top your pizza with the dough already on the stone. Make sure you don’t get any of the sauce on the peel because the moisture will make the dough stick.
2. Keep in mind that it’s harder to put the pizza into the oven than to take it out because it’s still floppy.
3. Try to do a nice drop instead of shaking the pizza off, as shaking it off could cause it to lose its shape. Use a swift back and forth wrist action to drop it onto the baking surface – but try not to angle the peel down too much or the edge of the dough will get caught on the edge and your toppings will fall off.
4. Want to practice? Fold up a dish towel and place it on the peel. Then you’ll be ready to get the real thing in the oven in one try.
