These compact, high-capacity fryers are available in a variety of widths and kettle capacities to suit your unique needs. Countertop deep fryers are an easy way to save space in your kitchen where space is often as a premium, and for those of you who don't fry enough food to call for a larger capacity fryer, these little powerhouses are perfect. Don't forget to also stock up on all of the fryer baskets, fryer screens and filter paper you need for frying on a daily basis!
Historically, gas fryers are cheaper to operate due to lower initial equipment costs and low gas prices. That said, utility costs for gas have risen faster than electric rates, so over time you may find that the initial cost doesn't mean as much long-term. With gas fryers you have an option between tube-style deep fryers or open pot deep fryers. Tube style fryers have a series of tubes containing gas burners that run through the bottom of the heating tank. This style of fryer also has a cooler sediment area below the tubes; the sediment area can be helpful in keeping particles out of your food (thus extending the life of your oil) but could be difficult to clean. Conversely, open pot deep fryers have either a gas burner or an electric heating element that wraps around the base on the outside of the oil tank. Open pot fryers often feature a narrow bottom to allow particles and other sediments to settle and can be easier to clean than tube style deep fryers.
Whether you opt for an electric or gas fryer, pay close attention to recovery time when it comes to gas or electric fryers; this could prove extremely important if you fry a lot of freezer-to-fryer items. When you drop a basket of cold, frozen food into a vat of hot oil, the temperature of the oil itself will drop rapidly. Fast recovery times means that your oil will heat back up to temperature more quickly, keeping your kitchen running efficiently and helping you save on energy costs. Electric fryers with not enough voltage (think 110V) while cost-effective may take longer to recover than those fryers that have higher voltage and higher wattage on the elements.
