Stainless Steel Work Tables Are Commercial Kitchen Workhorses
A stainless steel table is easy to sanitize and are rust-resistant, making it a highly durable table for any commercial kitchen. Stainless steel tables are also fairly lightweight, making it easy to move for cleaning; and moving is made easier, of course, with the addition of casters! Since stainless steel tables are not porous and do not react to acids, it is ideal for meeting food safety requirements for all kinds of food preparations.
Types of Stainless Steel Tables
Stainless steel comes in roughly 50 different quality variations; the most common of which for those in the foodservice industry include: 304, 304L, 316 (great for salty environments) and 301. 304 stainless steel (which contains nickel and has a higher percentage of chromium) is commonly used in foodservice due to its rust-resistance, ability to maintain strength at high temperatures and easier maintenance.

Good: 18 Gauge Stainless Steel
18 gauge stainless steel work tables are your cheapest option because this level of stainless steel is lighter than other types. Ideal for general work space, salad preparation and other basic tasks, these kitchen work tables can be more susceptible to dents and dings.
Better: 16 Gauge Stainless Steel
The most common type of stainless steel table you'll find in a commercial kitchen is one made from 16 gauge stainless steel. High quality and equally affordable, 16 gauge stainless steel tables offer better durability than 18 gauge models without breaking the bank. These types of stainless steel work tables can withstand all of the chopping, pounding and other preparation you'll be working on.
Best: 14 Gauge Stainless Steel
Extremely strong (and heavy), 14 gauge stainless steel tables are often used in large institutions, the government, education and health industries. You might find that a 14 gauge table is a little overkill for most commercial kitchens, however some specialty shops like butchers like the durability and added customization options.
