    what are the surfaces made of? how do you clean them? what temperature doe the unit operate at? does the lid need to be closed? how quickly does it reach max. heat?

      A:

      The grilling surface platens are made of cast iron and a simple wipe down is recommended to clean them. You should treat this just like any cast iron pan. The thermostat is rated from 175°F (79°C) to 450°F (232°C). You do not need to have the top plate down for it to operate properly.

      To season, bring grill to 300°F, until completed. Brush upper and lower cooking surfaces with a a salt free liquid vegetable oil. If using an aerosol agent, first apply into a cup and then brush onto cooking surface. Let sit for 20 minutes, and then wipe clean using a warm damp cloth. Repeat if required.
