Hood filters, also known as “grease filters,” are one of the most important items in your commercial kitchen. The primary purpose of your hood filter is to filter the grease out of your smoke during the cooking process. And this is an important job because failure to filter this smoke over time could put you at risk for a major fire. HOOD FILTER SIZING AND MAINTENANCE
Sizing your hood filter correctly is the first step. Hood filters are often sized ½-inch smaller in the horizontal and vertical dimensions; so for example, if your hood opening is 20'' by 20'', the correct size hood filter for you is 19½'' tall by 19½'' wide.
Now for maintenance. The best way to maximize the life of your commercial hood filters is simple: Daily cleaning. You can put your hood filters right in your high temperature dishwasher. Just be sure never to use bleach or any other type of chemical on them.
