We don't recommend cooking in the dark. Between the heating elements, sharp tools, and (literally) several cooks in the kitchen, a well-lit commercial kitchen is important for safety and performance. Over time, light bulbs and assemblies burn out unexpectedly. Rather than investing in a completely new fixture, try shopping for the light fixture part first—you may find a little DIY will save you some big bucks.
